This dolcetto comes from an east facing vineyard in Monforte d'Alba that was planted in 1971; the wine is fermented on the skins in stainless steel for 8 days with frequent pump over. Then the wine spends a brief period in 15-30hl barrels to start the malolactic fermentation. Delicate aromatics leaning toward dried violets and roses with hints of leather light in color and body a wine made for lighter pasta dishes with a creamy richness, or a mixed grill of sausage on a bed of polenta. Very elegant and light and only 12.5% alcohol.
