Delicately effervescent, this blend of 30% Pinot Noir and 70% Chardonnay was grown in mainly marl-limestone soils and farmed sustainably (Domaine Baud is certified by Terras Vitis). The village of Apremont once sat in the shadow of a great mountain. In 1248 that mountain collapsed, destroying, everything in its path. Fortunately, the mountain itself was made of limestone which is some of the best geological material for growing grapes and the site is littered with limestone scree (broken rock fragments). Domaine Baud's flagship wine. A powerful, deeply golden elixir with intriguing notes of hazelnuts, almonds, truffle and curry. This shows finesse and elegance in spades, thanks to the very special blue marl soil in which it is grown and careful cultivation. The wines of Château Chalon must be made in the vin jaune style, aging for six years in barrel, which requires a veil of surface yeast to develop.
