Barnaby and Olga Tuttle's Portland-based Teutonic Wine Company, is, need we say, an idiosyncratic outfit focused on German and Alsatian wine styles. And obsessively focused on terroir — they now collect grapes before harvest from each vineyard in order to start a native yeast culture for each fermentation.
