Brewer Menno Olivier brings 12 years of experience to his Brouwerij De Molen, which translates to "The Mill Brewery," as the operation is located in a 300-year-old windmill. He began brewing in his kitchen as a hobby, went on to brew in Westmaas and Amsterdam, and then served as master brewer of De Pelgrim, a Rotterdam city brewery. From the brewery: "Inspired by crisp December nights on our estate in the foothills of the Great Smoky Mountains, this Saison is reminiscent of the natural nuances of winter. Light and dark wheat add palate fullness to this Saison’s floor malted barley backbone. Almanac Beer Company takes its Saison Dolores and ferments it with twelve different brettanomyces strains, then ages it in wine barrels and foeders with peaches and nectarines.

2016 AleSmith "Decadence" Imperial California Common, California (750ml) (Previously $15)

AleSmith created an "Imperial California Common". Maintaining a stylistically sound way of making this singularly styled beer, the brewery fermented a lager at warmer ale temperatures. The process causes the yeast to have different flavors than if fermented colder (more typical of Ales vs. Lagers). Per the brewery, the resulting beer is, “A combination of fruity, mineral-like flavors, borne from the lager yeast esters.” Interestingly, this is the only time AleSmith has ever brewed this beer.

This hop forward Ale begins with orange and grapefruit aromas. A medium bitterness balances with bready malt flavors, while a background note of oak tannins pulls it all together. Hanssens "Experimental Raspberry" Lambic, Belgium (375ml) (Previously $17)

Hanssens Artisanaal is like a negociant for beer. It has been around since 1896, currently run by a husband and wife time, they are the last indy geuze blender in the world. And while they don't brew anything themselves, they have access to some of the best brews in Belgium. This lambic is fermented with raspberries and aged in oak; it is sour and funky and delicious.

"Say hello to our Californian interpretation of a Belgian Lambic. This barrel-aged sour is fermented with Brettanomyces and Lactobacillus before extended barrel-aging in red and white wine barrels. A limited small batch release, the Rosiline is another in the SALVAJE DE ROBLES series from Barrelhouse. Using strawberries from local farms, the brewers at Barrelhouse present this dazzling sour.

Picobrouwerij Alvinne "Wild West - Blackthorn Sloeberries" Wild Ale Aged in Pomerol Barrels w/Sloeberries, Belgium (500ml) (Previously $15)

This beauty is a Golden Flemish sour, oak aged in Bordeaux barrels, then fermented with Morpheus yeast(a special hybrid yeast created by 1 of the 3 brewmasters). Hand harvested sloe-berries (grown in Flanders, Belgium) were added to the Wild West Sour. Pure magic.

This is loaded with complexity, thanks to the Claussenii strain of Brett, plus fermentation and aging in French oak. According to the brewery, "The sheer variety of fruits, funk, and earth character leads one to wonder how this beer was crafted without actual fruit!"

Frecon Orchards "Scrumpy" Farmhouse Cider, Pennsylvania (750ml) (Previously $20)

Family owned in Berks County, Pennsylvania. They make their ciders from their own orchards, which they've been growing since 1944. Scrumpy is a British term for farmhouse cider. Frecon's version is made from heirloom apples and indigenous yeasts.

Barrelhouse Brewing "Celebratory Ale No 4" Ale Blend w/ Brett aged in Oak Foeder, California (500ml) (Previously $18)

Born from our Salvaje and Reservado Series of beers this year’s Celebratory Ale is unlike anything you’ve had before. We started with a robust stout base and co-fermented it on the juice from apples in a port wine Foeder where it aged with Brett until we blended it with three of our most sacred of beers: Grog, Curly Wolf, and Heidbanger. This delicately tart and massively complex beer is incredibly drinkable boasting characters of fig, vanilla, caramel, & apple pie with a warming finish. Weighing in at 8.3% ABV and is ready to drink or cellar for years.
