 There is touch of candy and distant suggestions of peaches to be found in both the aromas and flavors of this explicitly champenized offering, but the wine is fixed first and last on articulate yeast and is a complete sparkler that hits all of the right marks. It comes with a fine and decidedly creamy mousse and exhibits a little more depth as well as an extra measure of richness when compared to most of its Brut cousins, and it is kept buoyant and bright from beginning to end by its enlivening, seamlessly fit acidity. Toasted nuts, double cream brie, oysters and roast game bird; these are a few of our favorite things, when we're pairing rich California sparkling wine from Domaine Carneros. The Champagne house Taittinger, which knows terroir when it comes to sparkling wine, established this sparkling wine house in the Carneros appellation in 1987. The winery's notes on this brand-new vintage: "The 2010 harvest was marked by a cool late spring, which delayed bud break. The berry size was unusually small, however, slightly more clusters than typical, produced a near normal crop. The resulting wine is intense and elegant. Lovely aromas of pear, golden apple, honeycomb, lemon zest and brioche lead to a very round palate and a long silky finish."
