Grown at the Esteve Vineyard in Jerez Superior, this PX has aged for more than 30 years. While seductive and decadently sweet, it's balanced by penetrating acidity that moves with agility between the chocolate, sweet spice and caramel flavors. With time in the glass, smoky notes and nut confit flavors emerge with force. This is ideal for sipping slowly after a heavy dinner.
Thick and intense, it coats the mouth with burnt molasses, caramel, but also an aged, oxidative note that sets it apart form its peers. Fruitcake, sultana and bitter chocolate accents add to its appeal. It's harmonious and finishes surprisingly elegant. Drink now. (Web-2008)

The NV Noe Pedro Ximenez Muy Viejos VORS 30 Anos from sun-dried Pedro Ximenez grapes originates in the Nectar solera, and has a final average age of more than 30 years. The sugar level is 400 grams per liter. It has a different character and profile, more vinous than other PXs, it displays a volatile nose, with some minty, herbaceous and balsamic notes, intermixed with incense, ash and tar. The palate is extremely intense, velvety and round, with balanced sweetness, ending with a varnished note that lifts the wine up. Drink 2013-2019. (LG)
This is very impressive, incredibly old PX from the Sherry house which arguably has the widest range of soleras both young and old. The wine shows all the delicious rich dried fruit flavors (prunes, figs, dates, currants), spice and roasted coffee bean nuances of great old PX, as well as a surprising amount of acidity which beautifully balances the very high residual sugar. Yes, this is sweet, but it is as balanced a PX as I can ever remember tasting...and one of the best sweet sherries I have yet to drink. What a deliciously indulgent way to end a meal!
