Soliko Tsaishvili started making wine as a hobby 30 years ago. He now farms 13.5 acres in Kakheti under biodynamics. some vineyards reaching 50 years old. For this white, based on Rkatsiteli with a little Khikhvi and Mtsvane, he destems the grapes and then adds some stems back along with the grapes in the traditional Georgian earthenware qvevri. After a spontaneous fermentation, the wine remains in the quevri for about six months. That extended skin and stem contact makes for gripping wine, almost more food than drink. It's deeply orange in hue with wild flavors ranging from uni and daikon to smoked ham and oolong tea. Yet despite the concentration of flavor, it has a coolness to it that brings to mind a cellar on a hot day - earthy yet refreshing, a haven that feels far from the outside world.
Tsarapi is the vineyard name. Biodynamically grown. Very eye-catching label. Deep apricot colour. Slightly reduced. Light nose but very lively. Broad and waxy and all the flavour is on the palate not the nose. Grows on the palate. So chewy! Very massive with lots of tannins. Fades a little fast at the moment.
Intensely smoky and earthy on the nose and palate, this Georgian qvevri-aged wine is a showcase of minerality and textural complexity. It’s a savory wine with bristling tannins, and it bears just a hint of citrus that keeps the palate fresh and bright.
Our Wine is a five person group effort founded in 2003. The purpose was to create Georgian wine of high quality while continuing the old traditions of winemaking and viticulture. The vine age varies between 15 and 45 years of age and the entire wine making process takes place in the traditional clay vessels called quevri. This wine has a rich gorgeous orange copper color with lots of citrus flowers, wet mineral and stone fruits. On the finish there is a nice hit of spice with a fairly impressive tannin structure and good length. (Eric Story, Georgian Buyer)
