What's in a name? Most people will see Malvasia and immediately think sweet and for Malvasia Bianca they'd more often than not be correct but this is Malvasia Istriana something altogether different. This bone dry wine is fermented on the skins in open top wooden tanks using nothing but wild yeast and then it is aged for 2 years in big wood. This wine is absolutely stunning, an extraordinary persistence in the mouth, with layers of fruit and the classic Carso salty minerality. Have this with grilled Swordfish or a risotto, you'll thank me.
