If you're into Jura wine, then you already know the name Jacques Puffeney--he's one of the most esteemed producers in the the region, having earned the nickname "the Pope of Arbois" by his colleagues. His vineyards are located in the villages of Montigny Les Arsures, Arbois and Villette des Arbois. While all of the wines Puffeney makes are worth seeking out, the most unique and highly sought after is his Vin Jaune, an oxidative, dry white wine made entirely from Savignin and not made every vintage. The Savagnin destined for this wine ages in foudre at least 6 1/2 years, though usually more like 8 1/2 years, under voile. Nutty and fabulous.
