Sitia 0.3 Extra Virgin Olive Oil
The village of Sitia is on the Northeastern side of the island of Crete and is home of the Cooperative of Sitia. The Cooperative produces the Sitia Wines as well as the world renowned Extra Virgin Olive Oil, Sitia 0.3. Since 1998, the olive oils of Sitia have received many prestigious awards from various international olive oil councils and competitions. In 1999 and 2000, the Sitia 0.3 received the gold medal in the International Olive Oil Councils annual competition in Madrid, Spain. The perfect health of the olive groves here is achieved by fighting birds and diseases and especially the olive fly (dacus oleae), using decoy methods. The collection of the olives is done by beating the trees with staffs, taking care that the fruit is at the right stage of maturity, and transport of the harvest is done using sacks made from vegetable fibers, holding up to 50 kilos. Processing always takes place within 3 days at oil presses in the prefecture of Sitia, maintaining a temperature of less than 30 degrees Celsius throughout all stages of production. Finally, oil is selected that is superb in every respect! Sittia's 0.3 olive oil is at the very peak of quality with an acidity of up to 0.3% and an exceptional taste and aroma.
