2006 Domaine de Montbourgeau Vin Jaune de l'Etoile (620ml)

Made from 100% Savagnin, grapes are harvested late in the season with relatively high sugar levels for the region, but only a 13% finished alcohol level. After conventional vinification and six months of rest, the wine is transferred to 230-liter barrels. Over the course of seven years, the wine becomes a "vin jaune" as it takes on the richly complex and intentionally oxidative profile that is associated with this special bottling. From the winery : "With aromas of nuts, spices and vanilla, it develops elegance and harmony in the mouth. It is a wine with great aging potential."
