Dry, but definitely not bone dry, this Sec offers a complex nose of dried peach and pear, honey, nutty lees, and lanolin, with notes of candied orange peel and stony minerals. The palate is saturated and intense, but balanced by precise acidity and marked by the slightest hints of umami. It fills the mouth with a rich mousse, then narrows to a focused finish that lingers with flavor. Pair it with wild mushroom 'vols-au-vent' to draw out the wine's subtle savor.
