This "en rama" (which literally translates as "out of the barrel") Fino is not filtered, in order to approximate the way this examplary fino tastes when a 'capataz' draws a sample of fino directly from the barrel and offers a taste. While a well-made fino, which is typically cold stabilized and rather aggressively filtered to reach a desired pale straw appearance and consistency, is a delicious drink, after sampling a true "en rama" style, with the intense combination of nutty, salty flavors which reall pop on the palate, you may find it difficult to drink anything else. We just did a big Spanish wine staff tasting and this was my very favorite of the bunch. A wine of such complexity has no right to be so refreshing, and absolutely no business being so inexpensive. When I get this home, it will be hard not to go crazy with it, especially since I still have a package of marcona almonds in the cupboard. This nougaty, smoky, intense, salty, spicy fino finishes with the kind of high class chalk that reminds me of the best Blanc de Blancs Champagne. Any fan of Sherry shouldn't go without a bottle!
