The folks at Mer Soleil describe it as capturing "the crisp, pure, mineral essence of the classic Chablis style with the tropical elements found in Chardonnays of the Pacific coastline." Select blocks of Chardonnay from the Mer Soleil Vineyard in the cool Santa Lucia Highlands are harvested at perfect ripeness, with high natural acidity, then fermented in a combination of stainless steel and natural cement tanks. No malo, no oak - just pure, clean, crisp Chardonnay. The 2011 reveals bright green apple, lemon and tropical fruit aromas and flavors, balanced acidity, and chalky mineral undertones.
