Another fabulous Chinon from the folks at Domaine de la Noblaie, this comes from Cabernet Franc vines planted before World War II that are hand-harvested and then allowed to macerate in a vat carved out of the limestone tufa back in the 15th century. Aged for a year in 500-liter barrels and then finished for another eight months in tank, this is serious Chinon, with aromas of blackberry and black raspberry, plus toasty vanilla and nutmeg spice. The fruit is plush and supple on the palate, with mouthcoating tannins and lots of spice. Try this with hearty stews or something off the grill now, with some decanting, and over the next decade.

Fresh confession: I can't get enough of wines from the Loire, both reds and whites are uncommonly phenomenal in their magnanimous, minerally complexity of flavor profiles, demonstrating a range and diversity probably unparalleled throughout the gracious mother of wine countries known as France. Hyperbole aside, the singular laser beam of mineralized fruit that rises from the glass of this lovely Cabernet Franc left me breathless. Maybe it's the superb selection of perfectly-ripe, old-vine, spicy black fruit fermented in an ancient tuffeau tank, a masterstroke of skill, finesse and power. Drink it. Or hold. Then drink it.

Cabernet Franc

- While Cabernet Franc, a parent with Sauvignon Blanc to the ubiquitous Cabernet Sauvignon, frequently plays second fiddle in Bordeaux blends (though it does get more props on the Right Bank, where it dominates Cheval Blanc), this lighter, higher acid/lower tannin, early-maturing, perfumed red varietal is far from a wallflower. It is the headliner in the Loire Valley appellations of Saumur-Champigny, Bourgueil, St-Nicolas-de-Bourgueil, Chinon and Anjou-Villages, where it makes exceptional, food-friendly wines. Outside of France, Cabernet Franc can be found in northern Italy, particularly in Friuli and in California where it is frequently used as a blending grape in Bordeaux-style wines. Heartier in the cold than Cabernet Sauvignon, Cab Franc is gaining a foothold in northern and eastern wine regions like Canada, New York, Pennsylvania and Virginia.

- Of all of the French wine producing regions, the Loire might produces the greatest variety of wines.
