This is a warm weather white with real backbone, with citrus fruit, nice minerality, grip and length and a real affinity toward the foods of the region, anything cooked with wild thyme, especially grilled seafood. In the heart of the Causses (a group of limestone plateaus in the the elevated region of south-central France known as the Massif Central) is the AOC Minervois. In this special section of the western Languedoc is the village of Aigne, with its snail-like center. The origins of this charming village go as far back as the first century AD (when it was inhabited by the Romans), so it is believed that the winding streets were installed as a safeguard against invaders. This is red wine country (and to a lesser extent, rose country), but spectacular white wines can also tote the Minervois appelation.
