This is one of the best, freshest, most representative lighter style finos around. Gutierrez Colosia enjoys a prime location in El Puerto de Santa Maria, which, due to the cooling influence of the Atlantic, allows for the development of a healthy layer of flor year-round to protect their soleras and contribute the tell tale salty, slightly almondy notes to the wine. For any fan of bone dry, mineral white wine who has not tried this, you should surely give this one a go - I would be hard pressed to find a tastier aperitif. The Elcano Fino has a wonderful mineral driven nose, with a flinty character shading into something reminiscent of petrol, accented by a touch of briny, green olive character(and, yes, as you’d expect it goes great with same) and a slightly yeasty-farinaceous note, like a faint whiff of fresh baked whole wheat bread. There is only a slight trace of nuttiness waaaay in the background. A lively wine, this starts out cool and wet then before finishing with a much drier, almost resinous character. Delicious stuff! I find I keep going back for yet another bottle of this…
