A lovely dessert wine made from picked-at-their-peak Vermont apples! Eden's "Calville Blend" Ice Cider is made by harvesting MacIntosh, Empire, Russet, Ashmead's Kernel and Calville Blanc apples at their peak and then holding them in cold storage until the heart of winter. The apples are then pressed and the juice is set outdoors to freeze for 6-8 weeks to concentrate the sugars. The resulting elixer is then fermented, resulting in this full-bodied, sweet-tart cider, which is delicious with artisanal cheeses.
