A pretty, delicate pink color, the tart red currant, berry, slightly savory flavors and finesse of this rosé recall a subtle, food friendly Chinon rosé. It is probably the driest rosé I have yet to drink this year, so keep that in mind. With a touch of txakoli's trademark fizz thrown in, this is a fun bottle for the wine geeks. Pair with any simply grilled fish, particularly salmon.

While enjoying one of my last bottles of the 08 vintage of this rosé, I couldn't help but think how much a fan I am of high acid, tense rosé such as this. And if there is a little fizziness as well as a subtle savory quality, even better. Enjoy this beauty this summer and throughout the year
