It has that classic Macul-area aromas of black olive and tobacco, but the fruit form this great vintage is elevated and pure. Look for graphite, tar, cassis, cherry and chocolate all rolled into one fine, ageable package..." If you have a current issue of the Wine Spectator, go to page 93 and check out the beautiful photo of this winery's Maipo Valley vineyard, featuring 80-year-old Cabernet Sauvignon vines and the snow-capped Andes in the distance. According to the magazine, "...the wine is a prime example of Chile's prowess with the variety." Yields here are minuscule, 1-1.5 tons per acre, and it shows in the sheer concentration and intensity of the wine. Aromas show intense black fruits, with a hint of orange peel. There is a certain exoticism here as well, with traces of cumin and sweet bay leaf wafting out of the glass. On the palate, this is a tooth-staining, dark-fruited Cab. The cassis and dark fruit flavors are intense and pure, the texture rich, and the overall style quite modern but not too over the top. If this were made in Napa, it would undoubtedly cost a whole lot more. And if you enjoy top-flight Cabernet, this is one you should not miss.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
