2005 Rubicon Estate "Cask" Rutherford Cabernet Sauvignon
Lots of new, smoky oak stands out on this polished Cab. Give it a little time in a decanter before you drink, as it pulls together, becoming more powerful and accenting the blackberry and cherry flavors. Should develop for a decade.
Supple and graceful, with excellent balance, offering layers of plum, black cherry, blackberry and savory herbal scents. Gains complexity and nuance on the finish, where the flavors push on. (JL)
Rubicon's "Cask" Cabernet Sauvignon is a tribute to the wines of John Daniel's Inglenook. The estate grown fruit used in this wine are from the organically farmed Cohn and Chateau that have been producing cabernet since 1880. Aged in 500 liter American oak puncheons for 28 months, you'd be surprised how this wine is still dominated by incredibly ripe fruit. The oak adds a creamy, fleshy texture without the sometimes off-putting dill notes that American oak can add. This is a wine for your cellar, though if you must drink it now, decant an hour or two first.
