Raspail "Grande Tradition" Clairette de Die

Organic! This is a party wine without equal, and owes its tremendous bouquet to 100% Muscat grapes (most Clairette de Die contains Clairette grapes, which create a much lighter juice than Muscat). After the grapes are pressed, the juice is refrigerated and the half-fermented must is bottled. Fermentation continues in the bottle from the natural sugar in the grape. After fermentation in bottle in an air-conditioned cellar, the sediments are eliminated by riddling. Carbonation is produced exclusively by fermentation. The Grande Tradition Clairette is very expressive and persistent, and is wonderful with foie gras and ideal for all desserts. (Mulan Chan-Randel, K&L Rhone wine buyer) 8% abv.

This Clairette de Die is truly one of the most versatile sparklers that we have in the store. Just a touch of residual sugar imparts a delicate sweetness that make this the perfect wine to pair with salty appetizers like salumi or potato chips! It works great with spicier, more exotic fare like Indian curries and spicy Thai cuisine, too. An open bottle never seems to last longer than five minutes at dinner parties.
