Originally from Cyprys, Yiannis Tselepos studied oenology at the University of Dijon in France before settling outside the village of Rizes on the hillside of Mount Parnon, in the Peloponnese. The Amalia (named for Yiannis' wife) is a bottle-fermented sparkling wine produced from the Moschophilero grape, a hauntingly fragrant variety long favored in this part of Greece.
