 Years of lees contact have made this bubbly soft, creamy and complex, although it still has a crisp spine of acidity. The flavors are rich and doughy, with a ripe finish of strawberries and peaches. It’s a little sweet, and should hold well for several years.  (12/2005)

This cuvée of étoile Brut was aged for 5 years on the yeast, helping it evolve gracefully into a harmonious, seamless and exceptionally balanced sparkling wine with complex layers, elegant nuances and a lingering, yet lively finish. Fuji apple, candied ginger and hazelnut spice flavors. Hints of citrus blossom with a long, soft and creamy structure.
