Those enamored with the white burgundy will immediately find the shades of vanillin, smoke and bright fruit very pleasant on this nose. The bright and racy acidity is only mellowed by a year on oak. Made of the fiercely ageworthy grape savagnin, but vinified in elevage not unlike the Chardonnays from the 1er Cru vineyards of Puligny. Indeed the wine here is neither Savagnin nor the Burgundy you are used to; although its minerality and elegance similarly lends itself with brightness to the overtones of stone fruit in the mouth. This is a hugely versatile wine, but pairs very well with seafood. You'll find it just as eclectic a pairing as a fino sherry, but in an unabashed burgundian style of winemaking proudly expressive of the terroir.
