Macallan's latest release is a 12-year-old "double cask" malt, meaning the whisky spent time in both sherry-seasoned new American and European oak. The result is a rich and cocoa-laden malt that encompasses the sweeter and more decadent flavors of the sherry while still maintaining the malt's inherent flavors at the core with the spice of two different woods. This is the fourth (and final) cask of 1995 Imperial single malt whisky we've purchased from the Signatory warehouse, and we've definitely saved the best for last. The now-demolished facility will never make spirit again, so consider this cask one of the last goodbyes for a whisky we've come to love dearly over the years. Because of its role in Johnnie Walker Blue and its renowned reputation abroad, Linkwood always demands a high price wherever its sold. Fine and finessed in a way that few other Highland malts demonstrate, the Diageo-owned distillery can often taste like a finalized blend straight from the cask! Dufftown is more famous for being the home of Glenfiddich, rather than for the distillery that carries the town's name, but there is indeed an eponymous facility making whisky there. Dufftown distillery is a Diageo-owned plant that produces "The Singleton" single malt whisky for European release. "The Singleton" we see here in the states is made at Glendullan, but the styles are similar. Dufftown makes a classic Highland style malt, albeit with a bit more grit. While Bowmore seems to play second (or even fourth) fiddle to the Ardbeg, Lagavulin and Laphroaig selections on our shelf, we've always been enamored with Islay's most historic distillery. We've never let popular whisky culture or changes in the portfolio diminish the fact that Bowmore tastes pretty damn good in a number of iterations. This is the second cask of Glenburgie we've grabbed from the Signatory warehouse and it's another winner. The whisky is nothing flashy or wildly exotic, just smooth, rich, and delicious from front to back. Any time we can sell delicious 20+ year old cask strength single malt for under a hundred bucks, we're probably going to take that deal. Glenburgie is known more for its role in Ballantine's blended than it is as a stand-alone single malt, but these single casks should help change that perception. When the doors opened at the Mitchell's Glengyle Distillery in March of 2004, it became the first new distillery to open in Campbeltown in more than 125 years. Campbeltown, once the center of whisky production for Scotland, had been hit hard over the last century and had dwindled down to two distilleries - Springbank and Glen Scotia. If pressed, I would probably put Longmorn in the top tier of Highland malt whisky producers right alongside more heralded names like Macallan, Glenmorangie, and Glenfarclas. There is something ineffably quintessential about Longmorn's richness, weight, and texture; there's a core of sweet vanilla and malted barley in just about every expression I've ever tasted from the distillery, and I always walk away from the drinking experience utterly satisfied. Nikka's latest release from Yoichi distillery no longer carries an age statement, but it does bring a classically Japanese whisky profile back to the market. All the delicacy, grace, and subtle complexity is alive and well in this release, buried deeply into a whisper of malt for those who take the time to let it be heard. This is our fourth cask of Benrinnes in the last two years and, believe us, it won't be the last. We've become rather infatuated with the Diageo-owned Highland distillery since our visit a few years back. Not only were the ladies running the operation incredibly friendly and gracious, they also helped us to better understand and appreciate the delicate, malty flavors of this classic Scotch whisky operation. Nikka's Miyagikyo distillery is back on the market with a fantastic new offering that doesn't disclose the age, but has no problem disclosing serious flavor. The sherry integration of the whisky is utterly marvelous. It's clearly marked by classic notes of fudge, fruitcake, and toffee, but all three profiles are so harmonious and fluid that it's difficult to hold on to them for more than a second. The Springbank 10 year old is the perfect whisky to introduce you to this distiller's range. Matured in Sherry and Bourbon casks, this is a richly balanced expression. Pear scents are accented by notes of cereal, vanilla and smoky peat. The palate is malty, with baking spice and vanilla flavors, ending with a hint of salinity.

Light, clean, fresh Bruichladdich whisky at 100 proof, made from entirely Scottish barley. The new Laddie Classic drinks more like the old Rocks expression with its fruity demeanor and profile that was definitely meant for a glass of ice. There's just a hint of phenolic action on the finish with a lovely coating of sweet grains and soft vanilla. Well done.
It's no secret that we're big fans of Kilchoman distillery here at K&L. Our recent visit to the distillery on Islay really opened our eyes to the incredible job they're doing. Kilchoman is a tiny operation, producing on one still and malting whatever they can inside their humble barn. Because of their small scale, their cost of production is higher and prices for their whisky have not been inexpensive.
