2005 Elisabeth Goutorbe Brut Champagne

This sparkler has multiple personalities. When first opened, it was closed and only the yeasty, nutty aromas came through with average complexity on the palate. As time elapsed, aromas of hazelnut, citrus, and spices of cinnamon or allspice that also carried through on the palate became prominent then along with flavors of fresh apple crisp. The wine has a nice long smooth finish and great acidity. Not a champagne to drink cold, or you will smother all the great nuances --chilled, or cellar temperature is recommended. This is a great champagne of which I will be purchasing more for my cellar to enjoy over the next few to many years. Awesome stuff!
